12. post-midnight baking

even though we already had a bunch of cookies from previous baking endeavors, sophia and i couldn’t pass up an immediate trial run of these strawberry honey oatmeal bars from the pastry affair.  they’re easy, (not terribly un)healthy, and delicious!  i absolutely love any baked goods with jam, and a peanut butter and jelly sandwich (mine have about 3x more jam than peanut butter) is pretty much the standard go-to for a vegetarian sandwich.  so, based on my incessant ravings about jam, i present to you…

what you need:

  • 6 tablespoons unsalted butter
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1/4 cup honey
  • 1 1/2 cups old fashioned oats
  • 1/2 cup all purpose flour
  • 1/2 cup whole wheat flour (use 1 cup all purpose flour if you don’t have whole wheat)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup strawberry jam

what you do:

  • preheat oven to 350F; lightly grease an 8×8 baking pan
  • in a large mixing bowl, cream together butter and sugar
  • add the egg and honey, mixing until blended
  • stir in the oats, flour, baking soda, and salt – batter will be slightly sticky
  • press 3/4 of the batter into the prepared pan, spread jam evenly over the top, then crumble the remaining 1/4 of the batter on top of the jam
  • bake for 25-30 minutes, or until the top is lightly browned; allow to cool slightly in pan before serving

we ate all of these pretty quickly (and gave some to sophia’s mom), so it looks like it’s almost time for a new batch!
